Westcoast Halibut With Saffron Curry Sauce
- 1/2 teaspoon saffron
- 1/4 cup hot water
- 3 tablespoons olive oil
- 1 teaspoon cumin seeds
- 1/2 teaspoon fenugreek seeds
- 4 leaves kaffir
- 1/2 coriander seeds
- 1 lemon grass stock fresh, cut lengthwise
- 1 tablespoon crushed garlic
- 1/2 teaspoon tumeric
- 1/2 teaspoon cayenne pepper
- Basmati Rice

- Heat Sauce Pan, add a splash of olive oil, add onions, saute for a few minutes, add garlic, stir. Add rice, stir, add water & bay leaf. Cook as you normally would, or until water is absorbed.

- In a small bowl at saffron & hot water, side aside

- Heat a large sauce pan over medium high heat, add oil.

- Once oil is hot add, cumin, fenugreek, lemon grass, coriander, kaffir leaves, alloow to sizzle for 30 secs

- Add garlic, saute for 1 min

- Add tumeric, salt, cayenne & paprika, saute for 1 min

- Add coconut milk, cream, chicken stock, sugar & saffron water, allow to boil. turn down heat to low & simmer for 20min

- In a small bowl add lemon juice, corn starch & 1 tbsp of water, mix together. Using a whisk add to sauce

- Add fish to sauce & cook for 10min or until fish is cooked through

- Add salt to taste

- Serve with rice, naan bread & sprinkle with parsley
