Almond Joy Pancakes
- 1/3 cup greek yogurt - Plain
- 1/3 cup lite coconut milk
- 2 egg whites
- 1/2 teaspoon almond extract
- 1/3 cup whole wheat pastry flour
- 1/2 teaspoon baking soda
- 1/2 teaspoon sugar
- 1 tablespoon unsweetened cocoa powder
- 1 tablespoon shredded coconut - Unsweetened
- 1 tablespoon mini chocolate chips
- 1.) Mix Greek Yogurt, Egg Whites, Coconut Milk & Almond Extract into a small bowl
- 2.) In a separate bowl combine Flour, Baking Soda, Sugar, Cocoa Powder
- 3.) Combine and whisk till evenly mixed
- 4.) Fold coconut and chocolate chips
- 5.) Place 1/4-cup batter onto non-stick skillet and cook till bubbles start appearing through the top of the pancake and then flip. About 1-2 minutes on each side
- 6.) Top with Maple Syrup (I used Sugar Free), a pinch of coconut and a few mini chocolate chips.
