Melissa'S Favorite Butterscotch Raisin Cookies(Jumbo Recipe; Makes 6 To 8 Dozen)
- 2 c. light butter/shortening
- 2 c. sugar
- 2 c. brown sugar
- 4 eggs
- 2 Tbsp. vanilla
- 4 c. flour
- 5 c. ground oatmeal
- 1 tsp. salt
- 2 tsp. baking soda
- 2 tsp. baking powder
- 1 tsp. cinnamon
- 1 tsp. nutmeg or allspice
- 24 oz. butterscotch chips or chocolate
- 1 c. golden raisins or nuts
- Preheat oven to 375u0b0.
- Cream first 4 ingredients, then add remaining.
- Drop golf ball size cookies on baking sheets sprayed with baking spray 3 inches apart (1 dozen per tray).
- Bake for 10 minutes.
- Remove and cool even if they look uncooked when you're pulling them out of the oven.
- They harden when they cool and are easy to overbake.
- Cook and store in airtight container.
