Oatmeal Almond Waffles With Wildflower Honey Blueberry Syrup
- waffles
- 2 1/2 cups flour oatmeal
- 1 1/2 cups almond pulp, if you only have a cup, use what you got
- 2 eggs
- 1 cup milk non-diary, I used cocononut milk
- 1/4 cup oil I use coconut oil
- 3 tablespoons maple syrup
- 1 teaspoon baking powder
- 1 teaspoon cinnamon
- nutmeg Sprinkle of, optional
- wildflower honey
- 2 cups blueberries
- 3 tablespoons wildflower honey course you can use any kind of honey and sweeter - maple syrup is a good choice
- 1/2 lemon
- 1 pinch salt
- 2 tablespoons water
- Waffles: nix the dry and wet ingredients in separate bowl, then combime the almond pulp with the dry and mix well, then pour in the wet mixture. Let sit for 5 to 10 mins for the mixture to thicken and while your waffle iron is warming up.
- Wildflower honey and blueberry syrup:neat a small pan add blueberries and water, let it heat it for a few minutes, reduce heat to medium, add honey salt and lemon juice of half a lemon. Let it some to s simmer and reduce heat to low. Let it reduce to your desire of thickness. I let it cook down for about 10 to 15 mins of medium to low heat, adjusting it every so often and stirring so it won't bowl over or burn on the bottom.
