Creamy Salmon Spread
- 5 tablespoons dry white wine
- 1 pound salmon fillet skinned and deboned
- 1 tablespoon olive oil
- 2 carrots peeled and grated
- 1 lemon juiced
- 7 tablespoons butter softened
- 1/3 cup heavy cream
- 1 bunch chives chopped
- 1 pinch paprika
- bread toasted, to serve
- Bring the wine and 1/2 cup water to a boil in a saucepan. Add the salmon and simmer for 6-8 minutes then remove the fish from the saucepan. When cool, break it into pieces.
- Heat the oil in a pan and saute the carrots for 2-3 minutes. Add 2 tbsp lemon juice, season with salt and pepper then remove from the pan and cool.
- Beat the butter until creamy then stir in the cream. Stir in the salmon along with the carrot and 3/4 of the chives. Season to taste with lemon juice, salt, pepper and paprika. Serve with a sprinkling of the remaining chives and toasted bread
