Spaghetti With Zucchini And Parmesan
- 14 ounces spaghetti
- 3 tablespoons butter chopped
- 2 tablespoons olive oil
- 1 onion chopped
- 3 cloves garlic crushed
- 1/2 teaspoon dried chili flakes
- 3 medium zucchini grated
- 1 lemon
- 2 tablespoons chopped parsley
- 1/2 cup grated Parmesan cheese
- crumbs crispy, to serve
- Cook spaghetti following packet instructions. Drain well and return to pot. Keep hot.
- Meanwhile, in a large frying pan, heat butter and oil together on medium. Saute onion, garlic and chili 2-3 minutes, until onion is tender (be careful not to burn the garlic).
- Add zucchini, lemon juice, lemon zest and parsley. Cook, stirring, 1-2 minutes. Add the spaghetti and season to taste. Serve topped with parmesan and crispy crumbs if liked.
