Breaded And Stuffed Chicken Breast With Spaghetti
- 3 tablespoons oil + 1 tsp
- 1/3 pound baby spinach
- 2 pinches grated nutmeg
- 7 ounces spaghetti
- 4 chicken breasts butterflied
- 4 tablespoons cream cheese with herbs
- 2 slices ham halved
- 3 tablespoons all-purpose flour
- 2 eggs beaten and seasoned
- 1 cup breadcrumbs
- 1 teaspoon butter
- 2/3 pound cabbage cut into strips
- 3/4 cup heavy cream
- 1/3 pound cherry tomatoes
- Heat 1 tsp oil in a saucepan and saute spinach for 1-2 mins, until wilted. Add 1 pinch of nutmeg, season to taste then set aside to cool. Cook pasta in boiling salted water according to package directions then drain.
- To stuff chicken, spread 1 tbsp cream cheese over each breast, add spinach and 1/2 a slice of ham. Dredge chicken in flour, egg then breadcrumbs. Heat 2 tbsp oil in a large skillet and saute chicken over medium heat for 10-12 mins, turning as necessary.
- Meanwhile, melt butter in a pan, cook cabbage for 3-4 mins then add cream. Add 1 pinch of nutmeg, season to taste and simmer for 5 mins. Heat 1 tbsp oil in a frying pan and cook tomatoes for 4 mins. Mix drained spaghetti with cabbage and form into nests. Serve on plates with chicken and tomatoes.
