Fajitas

  1. Mix together lime juice, water, olive oil, garlic. soy sauce, salt, and liquid smoke. Stir in cayenne and black pepper.
  2. Trim any excess fat off of meat and cut meat across the grain into thin strips.
  3. Place the meat in the marinade and refrigerate overnight.
  4. Cut onion into wedges length wise. Cut peppers into julienne strips. Place vegetables in a separate resealable plastic bag.
  5. The next day:
  6. Remove steak from plastic bag and discard marinade.
  7. For cooking in a skillet, cook the meat first. Add a little oil to the skillet and get it very hot. If you don't get it hot enough the steak will steam instead of browning.
  8. When meat is browned, remove and add veggies. Place meat in foil while veggies are cooking. When veggies begin to soften, return meat to skillet to heat through.
  9. Place tortillas in microwave oven on a paper towel for 20 seconds on high heat.
  10. Serve meat and veggies in a warm tortilla topped with shredded cheese, salsa, sour cream, and shredded lettuce.
