Danish Braided Bun With Almonds
- 2 1/16 tablespoons fresh yeast
- 1/3 teaspoon milk
- 1 egg
- 4 tablespoons sugar
- 3 1/3 cups wheat flour
- 5 1/4 tablespoons softened butter
- salt
- 5 1/4 tablespoons almond paste
- 6 tablespoons sugar
- 5 1/4 tablespoons softened butter
- 2 teaspoons cinnamon
- 1 egg
- almond flakes
- Bun Preparation:
- Dissolve the yeast in the milk and let it stand for 5 minutes. Add the egg, sugar, flour, butter, and a pinch of salt. Knead in the food processor
- Knead with the food processor until the dough no longer sticks to the sides of the bowl. Remove from the food processor bowl, form a ball of dough and place it in a bowl. Cover the bowl with a cloth, and let rise for 45 minutes in a warm place.
- Place the dough on a floured surface, divide the dough in 2 pieces.
- Flatten each piece of dough and fold in half widthwise, then roll it into a long strip about 20 centimeters long.
- Place on a baking tray covered with parchment paper.
- Topping Preparation:
- In a bowl, mix the almond paste, sugar, butter, and cinnamon. You should get a thick paste.
- Gently spread this mixture on each long dough strand using a knife.
- This is a bit tricky because the dough is very soft and the mixture is a little thick. Then braid the two strands of dough.
- Let rise for 30 minutes.
- Preheat the oven to 400F.
- Glaze the braid with a beaten egg, even on the parts coated with the mixture of almond paste.
- Sprinkle with sliced almonds.
- Bake for 20 minutes.
