Mini Lamb Pizzas
- 2 teaspoons olive oil
- 1 onion thinly sliced
- 2 cloves garlic crushed
- 1/2 teaspoon ground cumin
- 1/2 teaspoon ground coriander
- 1 pound ground lamb lean
- 1/4 cup raisins
- 1 cup plain greek yogurt
- 4 whole wheat pita breads
- fresh mint leaves for garnish
- lemon wedges to serve
- Heat oil in a large saucepan on medium heat. Cook onion, stirring occasionally, for 5 mins, or until soft. Add garlic, cumin and coriander and cook, stirring, for 1 min, until fragrant.
- Add ground lamb and cook, stirring with a wooden spoon to break up any lumps, for 5-6 mins, until browned. Stir in raisins.
- Spread yogurt over pitas. Top with lamb mixture. Sprinkle with mint leaves and serve with lemon wedges to squeeze over.
