Balck-Eyed Pea And Ground Beef Chili

  1. Rinse peas in cold water and cook in water for 1 hour and 15 minutes.
  2. Wash the pepper, and cut in small cubes.
  3. Peel and slice the onion.
  4. Heat the olive oil in a Dutch oven, add the onions and fry until golden.
  5. Add the sliced pepper and saute for 2 minutes.
  6. Add the ground beef and fry for 10 minutes. Remove from pan and set aside.
  7. In the same Dutch oven, heat the olive oil.
  8. Add the can of tomatoes with the juice.
  9. Add the chopped parsley and simmer on very low heat while cooking the beans.
  10. Once the beans are cooked, add them to the casserole along with the meat mixture.
  11. Add Texas spice blend.
  12. Adjust seasoning with salt and pepper.
  13. Simmer for 15 minutes.
