Light Beef Stroganoff
- 3/4 lb. beef round steak, trimmed
- 1/4 lb. fresh mushrooms
- 1/2 c. sliced onions
- 1/2 c. condensed beef broth
- 1/2 c. water
- 1 Tbsp. ketchup
- 1/8 tsp. pepper
- 2 Tbsp. flour
- 1 c. buttermilk
- 2 c. cooked noodles
- Slice steak across grain into thick strips about 1/8-inch wide and 3-inches long.
- Wash and slice mushrooms; cook beef strips, mushrooms and onion in nonstick frying pan until beef is lightly browned.
- Add broth, water, ketchup and pepper.
- Cook and simmer until beef is tender about 45 minutes.
- Mix flour with about 1/4 cup buttermilk until smooth.
- Add remaining buttermilk.
- Stir into beef mixture.
- Cook stirring constantly until thickened.
- Serve over noodles.
- Makes 4 servings at 255 calories per serving.
