Light Beef Stroganoff

  1. Slice steak across grain into thick strips about 1/8-inch wide and 3-inches long.
  2. Wash and slice mushrooms; cook beef strips, mushrooms and onion in nonstick frying pan until beef is lightly browned.
  3. Add broth, water, ketchup and pepper.
  4. Cook and simmer until beef is tender about 45 minutes.
  5. Mix flour with about 1/4 cup buttermilk until smooth.
  6. Add remaining buttermilk.
  7. Stir into beef mixture.
  8. Cook stirring constantly until thickened.
  9. Serve over noodles.
  10. Makes 4 servings at 255 calories per serving.
