Nachos Grandes
- 1/2 pound ground beef
- 1/2 pound chorizo sausage
- onion 1 lg., chopped
- salt
- Tabasco Sauce
- 32 ounces refried beans
- 4 ounces green chilies chopped
- 1 1/2 cups monterey jack cheese grated
- 1 1/2 cups cheddar cheese grated
- 3/4 cup taco sauce
- 1/4 cup green onion chopped
- 1 avocado peeled and mashed
- 1 cup sour cream
- 4 1/2 ounces ripe olives sliced

- Crumble ground beef and sausage (casing removed) into a heavy frying pan and brown with onion. Drain and season with salt and Tabasco. Using a large shallow oven-proof baking dish (about 10 x 15 inches) spread with beans. Top the bean layer with meat mixture and sprinkle with green chilies and cover with the cheese. Drizzle taco sauce over cheese. This may be covered and refrigerated or frozen at this stage.
- At serving time, bake uncovered at 400 degrees for 20-25 minutes, or until heated through. Garnish with chopped green onions and ripe olives. Mound avocado in the center and top with dollops of sour cream.
- NOTE: Serve with tortilla chips around edges of bean mixture making a petalled flower effect. While serving, keep warm on warming tray.
