Santa Fe Chicken
- 1 bell pepper
- 1 onion
- 1 1/4 lb. boneless, skinless chicken breasts
- 1 can Ro-Tel tomatoes and chilies, diced
- 1 1/2 c. chicken broth
- 1 1/2 c. instant rice (uncooked)
- flour tortillas
- grated Cheddar cheese
- 1 tsp. paprika
- 1 tsp. salt
- 1/4 tsp. pepper
- picante sauce
- 1 garlic clove, mashed
- Cut up bell pepper, onion and chicken breasts.
- Sear chicken in 2 teaspoons oil.
- Add paprika, salt and pepper, stirring occasionally for about 4 minutes.
- Add bell pepper, onion and garlic.
- Cook about 4 minutes.
- Add Ro-Tel tomatoes, chicken broth and rice.
- Cover and simmer until rice is done or longer.
- Serve in warmed flour tortillas with grated Cheddar cheese and picante sauce.
