Fried Chicken With Simple Salad
- 2 slices bread toasted
- 2 pounds chicken parts
- 1/4 cup flour
- 1 egg lighty beaten
- vegetable oil for frying
- 1 tablespoon white wine vinegar
- 1 pinch sugar
- 2 tablespoons olive oil
- 1 lemon juiced
- lettuce leaves to serve
- 2 tomatoes sliced
- 1/2 cucumber sliced
- Place the toasted bread in a food processor and process until fine breadcrumbs form. Place in a shallow dish and season with salt and pepper.
- Dust chicken pieces with flour then dip in the egg. Press each piece of chicken into the crumbs to cover.
- Heat the vegetable oil in a large saucepan to 325u0b0F, or until it shimmers. Fry chicken for 15-20 mins, until cooked though and golden. Drain on paper towels.
- Meanwhile, whisk the vinegar, sugar, olive oil and lemon juice and season with salt and pepper. Drizzle the dressing over the salad ingredients. Serve chicken with the salad.
