Fried Chicken With Simple Salad

  1. Place the toasted bread in a food processor and process until fine breadcrumbs form. Place in a shallow dish and season with salt and pepper.
  2. Dust chicken pieces with flour then dip in the egg. Press each piece of chicken into the crumbs to cover.
  3. Heat the vegetable oil in a large saucepan to 325u0b0F, or until it shimmers. Fry chicken for 15-20 mins, until cooked though and golden. Drain on paper towels.
  4. Meanwhile, whisk the vinegar, sugar, olive oil and lemon juice and season with salt and pepper. Drizzle the dressing over the salad ingredients. Serve chicken with the salad.
