Chicken Saltimbocca

  1. Place chicken between sheets of wax paper or plastic wrap. Gently pound until each breast half enlarges to approximately 6 x 5 inches.
  2. Discard wrap.
  3. Place ham slice and half a cheese slice on each breast.
  4. Spoon 1 tablespoon tomato sauce on top; sprinkle on a bit of thyme.
  5. Roll up the breasts like jelly rolls; fold in the sides.
  6. Melt butter in baking dish.
  7. Combine crumbs, cheese and parsley on a plate.
  8. Dip chicken rolls first in butter, then in the crumb mixture.
  9. Arrange rolls, seam side down, in dish. Cover with wax paper.
  10. Microwave (power level 10) for 7 to 10 minutes, turning and rearranging rolls after 5 minutes.
  11. Let stand for 5 minutes, then serve.
