Morcilla Corn Dog - Braised Beans With Aji Amarillo
- 1/2 cup olive oil
- 1 quart fresh pork fat diced
- 2 cups onions diced, divided
- 5 cloves garlic chopped, divided
- 2 cups stale bread cubed
- 3 cups blood sausage
- 1 1/2 cups almonds sauteed in oil
- 3 pepper Aji amarillo, roasted, diced
- 2 cups garden peas
- 3 cups cannellini beans soaked
- coating batter corn dog batter
- Heat olive oil and add pork fat, add half of the onions and half of the garlic and saute until soft
- Cool, then add bread, blood sausage and almonds. Form into corn dog shape around a stick, refrigerate until ready to fry
- Dip in batter and fry until golden brown
- Saute remaining onions, garlic and peppers until tender and then add peas, beans and liquid. Cook until beans are tender, add more water if necessary
