Veracruz Style Baked Fish
- 3 cloves garlic peeled and chopped finely
- 5/8 cup onion peeled and finely diced
- 1 green bell pepper seeded and cut into thin strips
- 1 tablespoon oil
- 3 5/8 cups chopped tomatoes
- 2 bay leaves
- 1 teaspoon dried oregano
- 6 tablespoons pitted green olives chopped
- 3 1/2 tablespoons capers
- 4 fish fillets such as ling, about 150 g
- 1 3/8 tablespoons butter

- jalapenos sliced for garnish
- Heat oil in a frying pan, add garlic and onions and sweat until soft. Add tomatoes and bring to a boil. Add peppers and simmer for 2-3 mins, stirring. Add bay leaves and oregano and season to taste. Cover and simmer for 8-10 mins over medium heat. Add olives and capers and cook another 5-7 mins.
- Preheat oven to 400u0b0F. Heat butter in a frying pan and saute fish fillets on each side for about 2 mins. Transfer to a greased ovenproof dish and pour sauce over top. Cover with foil and bake for about 30 mins. Remove from oven and serve garnished with jalapenos.
