Baked Flounder
- 4 flounder fillets (about a lb.)
- 2 Tbsp. chopped onion
- 1/2 tsp. salt
- 1/8 tsp. ground pepper
- 1/3 c. apple juice
- 2 Tbsp. lemon juice
- 2 Tbsp. butter or margarine
- 2 Tbsp. all-purpose flour
- 1/4 c. whipping cream
- 1/4 c. freshly grated Parmesan cheese
- minced fresh parsley
- Arrange fillets
- in
- atightly greased 12 x 8 x 2-inch baking dish.
- Sprinkle
- with
- onion, salt and pepper.
- Combine apple juice
- and lemon juice;
- pour over fish.
- Cover and bake at 350u0b0 for
- 25 to 30 minutes or until fish flakes easily when tested with fork.
- Transfer
- fish to serving platter.ttrain and reserve 2/3
- cup
- liquid.
- Melt
- butter in heavy saucepan over lowteat; add
- flour,
- stirring
- until
- smooth.
- Cook 1 minute, stirring constantly.
- Add
- whipped cream and save 2/3 cup liquid.
- Cook over
- medium
- heat,
- stirring
- until thick. Pour over fish. Sprinkle with cheese and parsley.
