Baked Flounder

  1. Arrange fillets
  2. in
  3. atightly greased 12 x 8 x 2-inch baking dish.
  4. Sprinkle
  5. with
  6. onion, salt and pepper.
  7. Combine apple juice
  8. and lemon juice;
  9. pour over fish.
  10. Cover and bake at 350u0b0 for
  11. 25 to 30 minutes or until fish flakes easily when tested with fork.
  12. Transfer
  13. fish to serving platter.ttrain and reserve 2/3
  14. cup
  15. liquid.
  16. Melt
  17. butter in heavy saucepan over lowteat; add
  18. flour,
  19. stirring
  20. until
  21. smooth.
  22. Cook 1 minute, stirring constantly.
  23. Add
  24. whipped cream and save 2/3 cup liquid.
  25. Cook over
  26. medium
  27. heat,
  28. stirring
  29. until thick. Pour over fish. Sprinkle with cheese and parsley.
