Fruited Sweet Sour Pork
- 2 Tbsp. butter, oleo or oil
- 1 1/2 lb. lean pork, sliced in thin strips (I prefer pork tenderloin)
- 1 (13 1/2 oz.) can pineapple tidbits
- 1/2 c. Russian dressing
- 3/4 c. water
- 2 Tbsp. cornstarch
- 1 1/2 Tbsp. soy sauce
- 1 tsp. vinegar
- 1/4 tsp. salt
- 1 medium size green pepper, sliced thin
- 2 onions, sliced thin
- hot cooked rice
- Melt butter and saute meat until brown.
- Drain pineapple, reserve juice.
- Combine juice, Russian dressing, water, cornstarch, soy sauce, vinegar and salt.
- Pour over meat and stir until thick.
- Cover and simmer about 30 minutes, until meat is tender.
- Add green peppers, onions and pineapple.
- Cook about 5 minutes and serve over hot cooked rice.
