Cheddar, Spinach, And Pepper Omelet Bagel Sandwich
- 1 red bell pepper medium, chopped
- 1/2 sweet onion large, chopped
- 1/2 cup cheddar cheese
- 2 large egg whites
- 2 large eggs
- 1 tablespoon nonfat milk
- salt
- pepper
- 2 bagels sliced in halves
- 1 1/2 cups baby spinach leaves bagged
- Whisk eggs, egg whites, nonfat milk, salt and pepper in a large bowl, set aside.
- Add bell pepper and onion to large nonstick skillet pan with a little olive oil, and saute on high heat for a few minutes until softened.
- Turn down heat to medium; add egg mixture, tilting pan so the entire bottom is evenly covered.
- Cook for a few minutes.
- Pop entire pan under broiler. Broil 2 minutes, or until lightly browned.
- Arrange four bagel halves on a nonstick pan, cover with cheese. Broil until cheese is melted.
- Cut omelet in half, put on two different bagel halves.
- Top with a large handful of baby spinach and remaining halves.
