Coffee And Walnut Cake
- 2 cups flour
- 1 1/8 cups sugar
- 3 5/8 tablespoons margarine
- 4 egg yolks
- 4 egg whites
- 6 3/4 tablespoons coffee strong
- 1 teaspoon baking powder
- 2 tablespoons sugar for garnish
- 1/2 cup chopped walnuts coarsely
- Preheat oven to 180 degrees Celsius.
- Grease a 24 centimeter bundt pan with margarine and sprinkle with flour. Set aside.
- In a bowl, slightly melt the margarine in the microwave.
- Add 220 grams of sugar, and whisk well.
- Add the coffee, and then the egg yolks, and whisk well until obtaining a homogeneous dough.
- Add the flour and baking powder, and continue stirring until blended.
- In another bowl, whisk the egg whites with a pinch of salt.
- Add to the previous dough with a spoon, without whisking, mixing gently upwards.
- Place the dough in the pan, and sprinkle with 2 tablespoons of sugar, and the chopped walnuts.
- Bake for about 35 minutes.
- Remove from oven, and unmold.
