Raspberry Delight
- 2 1/2 c. raspberries
- 1/2 c. sugar
- 5 Tbsp. cornstarch
- 3 c. vanilla wafers, crushed
- 4 Tbsp. sugar
- 1 cube butter or margarine, melted
- 8 oz. cream cheese
- 1 can sweetened condensed milk
- 1/3 c. lemon juice
- 8 oz. Cool Whip
- Combine raspberries, sugar and cornstarch in saucepan.
- Heat to boiling, stirring frequently.
- Remove from heat.
- Cool.
- Mix together vanilla wafers, sugar and margarine.
- Spread 2 1/2 cups of mixture in bottom of 9 x 13-inch pan.
- Blend together cream cheese, sweetened condensed milk and lemon juice.
- Fold in Cool Whip.
- Spread over wafer mixture.
- When raspberry mixture is cool, spread over cream cheese mixture.
- Sprinkle remaining crushed wafers over top.
