Cream Cheese Pie With Coconut And Honey

  1. Preheat oven to 180u0b0C (approximately 350u0b0F).
  2. Grease a pie pan or a small rectangular pan with margarine.
  3. Set aside.
  4. Separate the egg yolks from the egg whites.
  5. Whisk the egg whites and a pinch of fine salt to stiff peaks. Set aside.
  6. Add the cottage cheese to egg yolks, and beat well with an electric mixer.
  7. Add sugar, honey, lemon zest, juice and grated coconut.
  8. Beat well until thoroughly combined.
  9. Gradually add the egg whites to the cheese mixture and gently fold until combined. Do not beat.
  10. Place the batter into the prepared pan. Bake for approximately 25 minutes.
  11. Remove from oven and cool.
  12. Cut into strips or squares.
  13. Serve sprinkled with powdered sugar and a drizzle of honey.
