Argentinian Stew In A Pumpkin Shell
- 2 lb. boneless stew meat
- 1 large onion
- 2 cloves garlic, minced
- 3 Tbsp. oil
- 2 large tomatoes, chopped
- 1 large green pepper, chopped
- 1 Tbsp. salt
- 1/2 tsp. pepper
- 1 tsp. sugar
- 1 c. dried apricots
- 3 potatoes, diced
- 3 sweet potatoes, diced
- 2 c. beef broth
- 1 medium pumpkin
- melted butter or margarine
- salt and pepper
- 1/4 c. dry sherry
- 1 (1 lb.) can corn, drained
- Cut meat into 1 1/2-inch cubes.
- Cook meat, onion and garlic in oil until browned.
- Add tomatoes, green pepper, salt, pepper, sugar, apricots, potatoes, sweet potatoes and broth.
- Cover and simmer 1 hour.
