Tamale Pie
- 3 Tbsp. butter
- 3 Tbsp. olive oil
- 1 small onion
- 1 clove garlic
- 1 1/2 lb. ground beef
- 1 (13 oz.) can tomatoes
- 1 (3 oz.) can whole kernel corn
- 2 tsp. salt
- 3 tsp. chili powder
- 1 can whole ripe olives
- 1 c. corn meal
- 1 c. milk
- 2 eggs, well beaten
- 1 3/4 c. Cheddar cheese
- Heat butter and oil and saute onion and garlic until golden brown.
- Add meat and brown slightly.
- Put tomatoes, corn, salt and chili powder in pan and simmer for 20 minutes.
- Let cool, then put with meat and pour into a shallow pan (10 x 14-inch).
- Press olives into mixture.
- Combine corn meal and milk with beaten eggs and spread with a spoon over filling.
- Sprinkle with cheese.
- Bake at 350u0b0 for 1 hour.
- Serves 8 to 10.
