Easy Apricot Chicken & Snow Pea Stir-Fry

  1. COMBINE stir-fry sauce, preserves, water and garlic in small bowl. Stir until blended.
  2. HEAT oil in wok or large skillet over high heat. Season chicken with salt and pepper. Add to hot oil; stir-fry until light browned, about 3 minutes. Remove from skillet with slotted spoon.
  3. ADD carrot to skillet; stir-fry 1 minute. Add snow peas, water chestnuts and green onions; stir-fry 2 minutes.
  4. STIR in sauce mixture. Bring to a boil, stirring constantly. Stir in reserved chicken. Heat through. Serve over rice.
