Easy Apricot Chicken & Snow Pea Stir-Fry
- 1/2 cup stir fry sauce bottled
- 1/3 cup Smucker's(R) Natural Blackberry Fruit Spread
- 1/4 cup water
- 1/2 teaspoon minced garlic
- 2 tablespoons Crisco(R) Pure Vegetable Oil
- salt
- pepper
- 1 carrot peeled and diagonally sliced
- 2 cups snow peas fresh, trimmed
- 8 ounces water chestnuts sliced, drained
- 2 green onions thinly sliced
- cooked rice
- 1 pound chicken boneless, skinless, cut into 1/2-inch pieces
- COMBINE stir-fry sauce, preserves, water and garlic in small bowl. Stir until blended.
- HEAT oil in wok or large skillet over high heat. Season chicken with salt and pepper. Add to hot oil; stir-fry until light browned, about 3 minutes. Remove from skillet with slotted spoon.
- ADD carrot to skillet; stir-fry 1 minute. Add snow peas, water chestnuts and green onions; stir-fry 2 minutes.
- STIR in sauce mixture. Bring to a boil, stirring constantly. Stir in reserved chicken. Heat through. Serve over rice.
