Cilantro Hummus With Fried Pumpkin Seeds
- 14 ounces chickpeas rinsed, drained
- 1/2 ounce cilantro leaves loosely packed, plus extra, to serve
- 1/4 cup lemon juice
- 1 tablespoon tahini paste
- 1 clove garlic crushed
- 2 tablespoons extra-virgin olive oil
- 2 tablespoons pumpkin seeds
- red pepper to serve
- cucumber slices, to serve
- For the hummus, add chickpeas, cilantro, lemon juice, tahini and garlic to a food processor. Pulse to form a paste. With motor running, add oil in a thin, steady stream. Keep running until smooth. Season to taste.
- Heat a frying pan on medium. Add seeds and cook 2-3 mins, shaking pan occasionally, until seeds are popped and lightly toasted.
- Transfer hummus to a shallow serving dish and sprinkle with seeds. Garnish with extra cilantro leaves and serve with sliced vegetables.
