Strawberry Coconut Slice

  1. Beat butter and sugar until fluffy .
  2. Add in egg and vanilla essence and beat further.
  3. Mix baking powder with flour .
  4. Fold in the flour and milk alternatively into the batter bit by bit .
  5. Grease a pan with parchment paper for easy handling.
  6. Spread the base mixture in the pan.
  7. Beat the butter with sugar until fluffy.
  8. Add in eggs one at a time.
  9. Add in desiccated coconut and flour and beat until all are well incorporated.
  10. Drop spoonful of coconut topping on top of the jam mixture until you cover the whole filling.
  11. Do not spread it because then the jam will mix in with the coconut mixture.
  12. Preheat oven at 180C and bake for 20-25mins.
  13. Leave to cool slightly before cutting into slices .
