Farm Raspberry Curd
- 1 3/16 cups raspberries
- 1 eggs
- 6 tablespoons sugar
- 2 tablespoons cream
- 4 15/16 tablespoons unsalted butter
- 5/8 tablespoon corn starch
- 1/2 gelatin sheet colorless
- Place the gelatin sheet in a bowl with cold water.
- Beat the egg with sugar and corn starch until you obtain a homogeneous mixture.
- Add the raspberries and the cream and heat this mixture over low heat, stirring until it starts boiling.
- Stir until it starts getting thicker. Add the butter and stir well. Remove from the heat.
- Squeeze the gelatin sheet and stir in the raspberry mixture until it dissolves.
- Place this mixture in a blender and grind it until the raspberries become seedless.
- Allow the mixture to cool down and pour it into a sterilized glass jar.
- Store in the refrigerator until you serve.
