Farm Raspberry Curd

  1. Place the gelatin sheet in a bowl with cold water.
  2. Beat the egg with sugar and corn starch until you obtain a homogeneous mixture.
  3. Add the raspberries and the cream and heat this mixture over low heat, stirring until it starts boiling.
  4. Stir until it starts getting thicker. Add the butter and stir well. Remove from the heat.
  5. Squeeze the gelatin sheet and stir in the raspberry mixture until it dissolves.
  6. Place this mixture in a blender and grind it until the raspberries become seedless.
  7. Allow the mixture to cool down and pour it into a sterilized glass jar.
  8. Store in the refrigerator until you serve.
