Mini Fruitcake Cookies
- 1/4 c. unsalted butter, softened
- 1 c. brown sugar, firmly packed
- 2 large eggs, room temperature
- 1/4 c. honey
- 1 tsp. vanilla
- 3 c. all-purpose flour
- 2 tsp. baking soda
- 1/2 tsp. ground cinnamon
- 1/2 tsp. ground cloves
- 1/2 tsp. nutmeg
- 1 c. coarsely chopped walnuts
- 1 c. raisins
- 1 c. chopped glace cherries
- Preheat oven to 300u0b0.
- In a large bowl, cream butter and sugar until smooth.
- Beat in eggs, honey and vanilla until fluffy.
- In a small bowl, stir together flour, baking soda, cinnamon, cloves and nutmeg.
- Gradually blend half the flour mixture into creamed mixture.
- Stir the nuts and fruit in remaining flour and blend with rest of the dough.
- Drop rounded teaspoonful of dough onto greased cookie sheet, spacing 2 inches apart.
- Bake one sheet at a time for 15 to 20 minutes or until centers of cookies spring back when lightly touched.
- Cool on racks.
- Makes 60 cookies.
