Turkey Dog Chili Mac
- 1 onion medium, diced
- 1 carrot grated- yep, we snuck a carrot into chili!
- 2 cloves garlic minced
- 2 tablespoons olive oil
- 2 tablespoons chili powder
- 2 teaspoons cumin
- 1 teaspoon oregano
- 1/4 cup water liquid-, /broth
- 28 ounces crushed tomatoes can of
- 6 ounces tomato paste can of
- 16 ounces chili beans cans spiced
- 1 package turkey hot dogs cut in bite size pieces
- 16 ounces noodles
- Saute the onion and carrot in the oil until semi-tender, about 3 - 4 minutes.
- Add garlic and spices, cook an additional 3 - 4 minutes until veggies are tender and spices are starting to stick to the bottom.
- Add the liquid to deglaze the pan.
- Once the liquid is absorbed into the veggies, add the beans, crushed tomatoes and tomato paste.
- Heat through and add the hot dogs.
- Let simmer while the noodles are cooking.
- Prepare noodles according to package directions.
- To serve, pour the chili over the noodles. Garnish with Parmesan cheese.....chow down!
