Cherry Ginger Biscotti

  1. Preheat oven to 325u0b0. Lightly grease and flour baking sheets; set aside.
  2. Combine flour, baking powder and salt in medium bowl; set aside.
  3. Beat Promise(R) Buttery Spread with sugar in large mixing bowl with electric mixer until light and fluffy. Beat in eggs and vanilla. Stir in flour mixture just until blended. Stir in cherries and ginger.
  4. Knead dough on lightly floured surface. Shape dough into flat log, about 14 x 1-1/2-inches on prepared baking sheet, with floured hands. Bake 35 minutes or until firm and golden. Cool 10 minutes on wire rack.
  5. Cut into 1/2-inch-thick diagonal slices. Arrange cookies, cut-side-down on baking sheet. Reduce oven temperature to 300u0b0. Bake an additional 20 minutes. Cool completely on wire rack. Store in airtight container.
