Bagels Brunch
- 1 tablespoon olive oil
- 8 slices bacon
- 1 tablespoon white vinegar
- 4 eggs
- 3 blueberry bagels split, toasted
- 3 bagels savory, split, toasted
- 1/2 pound cream cheese to serve
- 7 ounces smoked salmon sliced, to serve
- baby spinach to serve
- jam to serve
- honey to serve
- lemon wedges to serve
- Heat olive oil in a medium frying pan over high heat. Cook bacon for 1-2 mins per side, until crisp and golden. Drain on paper towels.
- Meanwhile, half-fill a deep-frying pan with water. Add vinegar. Bring to a boil then turn down heat. Working with 1 egg at a time, crack eggs into a small bowl then slide into water. Gently poach for 2-3 mins, until egg whites have set.
- Arrange bacon, eggs and bagels on a serving platter. Serve with remaining ingredients.
