Ginger Salmon Cakes
- 3 tablespoons olive oil
- 1 onion chopped
- 1/2 lemon zested
- 1 pound salmon skin-removed and diced
- 1 inch fresh ginger peeled and chopped
- canola oil for deep-frying
- 2 1/4 pounds baking potatoes peeled and cut into French fries
- 2/3 pound frozen peas
- fresh dill to garnish
- Heat 1 tsp olive oil in a pan and sweat onion until softened. Remove from heat. Combine with lemon zest, fish, ginger and 2 tsp olive oil. Season with salt then form into 8 patties. Heat remaining olive oil in a pan and fry patties for 4-5 mins over medium heat, turning once.
- Heat oil for deep-frying to 300u0b0F. Cook French fries, in batches, for 4 mins. Remove with a slotted spoon and drain on paper towels. Meanwhile, simmer peas in salted water for about 3 mins. Drain well. Serve fish cakes with French fries and peas. Garnish with dill.
