Salt Cod Fritters
- 8 ounces salt cod
- 1 egg lightly beaten
- 1 1/4 cups milk
- 2 1/4 cups flour
- 1/2 teaspoon baking powder
- 1 onion small, chopped
- 2 green onions chopped
- 3 tablespoons chopped cilantro
- 1 tablespoon lemon thyme chopped
- 1 scotch bonnet chili pepper seeded and finely chopped
- 1 clove garlic crushed
- vegetable oil for deep frying

- Soak salt cod overnight in water, changing water at least once. Drain; rinse. Place in a saucepan; cover with water. Bring to a boil. Reduce heat to low and simmer for 10 mins. Drain; flake, discarding skin and bones.
- Mix eggs and milk in a medium bowl. Place flour and baking powder in a large bowl. Add egg mixture; mix well. Add cod, onion, green onions, cilantro, thyme, chili pepper and garlic; mix well.
- Half-fill a deep skillet with oil and heat on medium heat (oil is ready when a cube of bread crisps quickly without absorbing oil). Fry spoonfuls of mixture, in batches, for 3-4 mins. Drain on paper towels. Serve warm with salad and chutney.
