Beer And White Chocolate Banana Bread
- 3 bananas medium or 2 large, well ripened
- 1 tablespoon grated orange rind fresh, or 1 tsp orange extract
- 1/3 cup beer I use blue moon for its subtle orange flavor
- 3 eggs
- 1 cup brown sugar packed, plus 1/3 cup for the topping
- 1/3 cup coconut oil
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1/2 teaspoon nutmeg
- 2 1/2 cups all purpose flour
- 1 cup white chocolate chips
- 1/2 cup chopped walnuts or pecans, optional
- 1/2 stick butter
- 1 tablespoon cinnamon
- In a large bowl, add the bananas, rind, beer and eggs. Turn on the mixer to its lowest speed and keep it on while adding the remaining ingredients.
- Stir in sugar and oil, baking powder and soda, salt and nutmeg.
- Add flour 1 cup at a time, then chocolate chips and nuts; stir into banana mixture just until combined if you like little banana chunks or keep it going for a smoother bread.
- Pour into 4 greased 5-3/4- x 3-1/4-inch loaf pans or 2 regular loaf pans. Bake in 400 degree F oven for 45 to 55 minutes, or until the center reaches 190 f.
- While the bread cooks, in a glass measuring cup combine the butter, remaining brown sugar and cinnamon and heat until the butter is melted. Then stir to combine. Pour over bread about 10 minutes before it is done. Too early and it will sink right into the middle.
- Let cool in pan on rack for 10 minutes. Remove from pan and let cool completely on rack.
