Turkey And Ham Salad With Mango Dressing
- 1/3 cup honey warmed
- 1/3 cup rice vinegar
- 1/3 cup peanut oil
- 2 teaspoons sesame oil

- 2 tablespoons rice vinegar
- 1 tablespoon sugar
- 1 clove garlic crushed
- 1 red chili pepper small, deseeded, finely chopped
- 1/2 pound turkey leftover, sliced
- 1/2 pound ham leftover, sliced
- 4 ounces baby spinach leaves
- 1 red onion small, finely sliced
- 2 ounces Asian herbs mixed, such as cilantro, mint and Thai basil
- 1 mango large ripe, peeled, sliced
- toasted sesame seeds for sprinkling
- For the marinade, mix together vinegar, sugar, garlic and chili pepper in a bowl. Stir until the sugar has dissolved. Place turkey and ham in a shallow bowl and pour in vinegar mixture. Set aside.
- For the dressing, whisk together honey, rice vinegar, peanut oil and sesame oil in a bowl.
- To assemble, toss together spinach, onion, herbs, drained meats and mango. Drizzle with dressing and sprinkle with sesame seeds to serve.
