Sausage Cannelloni
- 4 tablespoons olive oil
- 2 onions medium, finely diced
- 3 cloves garlic finely chopped
- 1 1/2 teaspoons curry powder
- 1/2 teaspoon sugar
- 1 1/2 tablespoons tomato paste
- 3 5/8 cups chopped tomatoes tinned
- 1 11/16 cups vegetable stock
- 8 pork sausages good quality
- 2 red chillies finely chopped
- 1 1/2 teaspoons Italian herbs
- 7 1/16 tablespoons cheese grated
- Heat oil in a saucepan and saute onions and garlic. Add curry powder and sugar and cook for 2- 3 mins then add tomato paste. Add tomatoes and stock, season, bring to a boil then simmer for 12-15 mins, stirring occasionally.
- Meanwhile, mix sausage meat with chilies and herbs then transfer to a piping bag. Stuff cannelloni tubes and arrange in a baking dish. Cover with sauce then top with grated cheese and bake for about 40 mins until golden brown.
