Banana Date Cake
- 1 1/2 cups whole wheat flour
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 2 bananas overripe
- 1 egg vegan, egg substitute + water, according to box
- 1/3 cup vegetable oil + enough to grease pan
- 1 tablespoon maple syrup grade b, optional
- 1/3 cup non dairy milk
- 3/4 cup dates chopped
- Grease 9 inch round pan with vegetable oil and preheat oven to 350 degrees Fahrenheit.
- In a large bowl, combine flour, baking soda, baking powder, and salt.
- In a medium bowl, mash banans until most lumps are gone. Add chopped dates, vegan egg, vegetable oil, maple syrup, and non dairy milk.
- Mix banana mixture into the flour mixture.
- Pour into cake pan and bake for 25-30 minutes, until toothpick comes out clean.
