Orange-Baked Sweet Potatoes

  1. Cut oranges in half; clip membranes.
  2. Carefully remove pulp and chop.
  3. Set orange cups and 1/4 cup pulp aside.
  4. Place butter in a glass measure; microwave at High 35 seconds or until melted. Spread pecans in a pie plate.
  5. Microwave at High 2 minutes, stirring after 1 minute.
  6. Combine sweet potatoes, reserved orange pulp, melted butter, pecans, brown sugar and remaining ingredients; stir well.
  7. Spoon mixture into orange cups.
  8. Place cups on a pie plate; cover with wax paper.
  9. Microwave at High 5 minutes.
  10. Yields 4 servings.
