Orange-Baked Sweet Potatoes
- 2 medium navel oranges
- 1 Tbsp. butter or margarine
- 1 1/2 Tbsp. finely chopped pecans
- 1 (16 oz.) can cut sweet potatoes, drained and mashed
- 2 Tbsp. brown sugar
- 3 Tbsp. orange juice
- 1/2 tsp. pumpkin pie spice
- 1/8 tsp. salt
- Cut oranges in half; clip membranes.
- Carefully remove pulp and chop.
- Set orange cups and 1/4 cup pulp aside.
- Place butter in a glass measure; microwave at High 35 seconds or until melted. Spread pecans in a pie plate.
- Microwave at High 2 minutes, stirring after 1 minute.
- Combine sweet potatoes, reserved orange pulp, melted butter, pecans, brown sugar and remaining ingredients; stir well.
- Spoon mixture into orange cups.
- Place cups on a pie plate; cover with wax paper.
- Microwave at High 5 minutes.
- Yields 4 servings.
