Walnut Cake With Maple Mascarpone Cream

  1. Cream the sugar and shortening together.
  2. Sift the flour, salt and baking powder.
  3. Add the dry ingredients to the creamed mixture a little at a time alternating with the coffee until well blended.
  4. Fold in the walnuts.
  5. Beat 3 egg whites into stiff peaks and fold them into the batter.
  6. Put the batter into a greased bundt pan.
  7. Bake for 50 minutes at 350u0b0 F.
