Baked Chicken With Honey-Ginger Glaze And Sweet Potatoes
- 2 tablespoons fresh ginger finely grated
- 1/4 cup honey
- 2 tablespoons brown sugar
- 2 cloves garlic minced
- 8 chicken thighs
- 1 pound sweet potato peeled, halved or quartered lengthwise
- 1 lemon thinly sliced
- 1 green chili large, sliced, optional
- Preheat oven to 350u0b0F. Line a large rimmed baking tray with parchment paper. Combine ginger, honey, sugar and garlic. Coat chicken in mixture then roll up loosely and arrange on prepared tray along with sweet potatoes and lemon. Drizzle with any remaining ginger mixture. Season. Bake, uncovered, for about 30 mins, or until chicken and sweet potatoes are cooked through and browned. Add chili, if using, around 20 min mark.
