Warm Salmon Salad
- 1 salmon fillet large
- potatoes Small
- 1 carrot diced
- green beans
- 1/2 lemon juice
- salt
- ground pepper
- olive oil
- fresh chives chopped
- Season the salmon with salt to taste, and grease lightly with olive oil.
- Heat a grill pan until it is very hot.
- Grill the salmon on both sides but not too much so that it doesn't dry out.
- Remove the skin, the bones, and divide into slivers.
- Boil the unpeeled potatoes in salt water.
- Cut into quarters after cooking.
- Remove the strings and the tips of the green beans, and cut in half horizontally, and then vertically..
- Boil the carrots and green beans in salted water.
- Heat a skillet with a bit of olive oil, and saute the potatoes, carrots, and green beans. When almost done, add the salmon.
- Season with lemon juice, and ground pepper to taste. Adjust the salt.
- Sprinkle with chopped fresh chives.
- Serve hot.
