Corn, Chive And Ham Rice Cakes
- 1 tablespoon olive oil
- 1 onion chopped
- 2 cloves garlic minced
- 3 ounces medium-grain rice cooked brown
- 3 1/2 ounces ham chopped
- 1 1/2 cups corn kernels canned, rinsed, drained
- 2 tablespoons chopped fresh chives plus extra, to serve
- 3 ounces cheddar cheese grated
- 3 eggs lightly beaten
- mixed greens to serve
- Preheat broiler.
- Heat oil in an 8 inch frying pan over high heat. Saute onion and garlic for 2-3 mins, until tender. Remove from heat and toss with rice, ham, corn and chives. Season.
- Wipe pan clean then place over medium heat. Lightly oil pan then add rice mixture, gently pressing down using back of a spoon until smooth. Sprinkle with cheese. Pour eggs evenly over rice mixture. Cook, loosely covered, for 8-10 mins, or until base is golden brown.
- Transfer to oven and broil for 4-5 mins, until just set and golden brown. Let cool for 10 mins. Cut into wedges and sprinkle with extra chives. Serve with salad.
