Chicken Tabouleh With Hummus
- 1/3 cup bulgur wheat
- 1 tablespoon vegetable oil
- 1 pound ground chicken
- 2 medium tomatoes chopped
- 1 red onion small, finely chopped
- 2/3 cup flat leaf parsley chopped
- 1/3 cup mint chopped
- 1 tablespoon lemon juice
- 8 lettuce leaves Boston or Bibb
- 8 ounces hummus store-bought, to serve
- 2 red radishes small, finely chopped, to serve
- smoked paprika to sprinkle
- Place bulgur a medium bowl. Cover with boiling water. Cover with plastic wrap and let stand for 30 mins to soften.
- Heat 2 tsp of the oil in a large skillet on medium heat. Add the ground chicken; cook, stirring with a wooden spoon to break up lumps, for 5 mins or until cooked through. Remove from heat; cool slightly. Add to the bulgur.
- Add tomato, onion, parsley, mint, lemon juice and remaining 2 tsp oil to chicken mixture; stir to combine. Season with salt.
- Place lettuce on plates. Fill with chicken mixture. Top with hummus. Sprinkle radish and paprika over hummus.
