Chicken And Tomato Wraps
- 2 tablespoons olive oil
- 1 pound boneless skinless chicken thighs trimmed and sliced
- 1 red pepper seeded and sliced
- 1 green pepper seeded and sliced
- 1 onion thinly sliced
- 14 ounces diced tomatoes
- 2 peppers small red chii, finely chopped
- 2 tablespoons cilantro leaves
- 8 flour tortillas
- light sour cream
- grated cheese
- shredded lettuce
- Heat oil in a large skillet on high heat. Brown chicken in 2 batches for 2-3 mins, until cooked through. Remove from pan.
- Saute peppers and onion in same pan for 1-2 mins. Stir in tomatoes and chili peppers. Season to taste. Simmer for 4-5 mins, until thickened.
- Return chicken to pan. Heat gently, stirring, for 1 min. Stir in cilantro.
- Meanwhile, warm tortillas according to package directions. Place spoonfuls of chicken mixture onto each tortilla. Top with sour cream. Sprinkle with lettuce and cheese. Roll up and serve.
