White Chocolate Ginger Mousse With Fresh Berries
- 5 1/4 ounces white chocolate coarsely chopped
- 1 egg
- 2 tablespoons orange liqueur
- 2 tablespoons sugar
- 3/4 cup heavy cream
- 1 ounce pickled ginger finely chopped
- 4 1/2 ounces blackberries halved
- 7 ounces strawberries sliced
- 3 tablespoons syrup cardamom
- pistachios finely chopped, for garnish
- Melt the chocolate in a double boiler. Remove from the stove and allow to cool. Add the egg, liqueur and sugar and whisk it until it's creamy. Whip the cream until stiff and combine the chocolate mixture with one third of the cream. Fold in the remaining cream and the chopped ginger and chill for 4-5 hours.
- Mix the berries and syrup and serve them with the chocolate mousse, sprinkled with pistachios.
