Monster Cupcakes
- 3/4 cup butter softened
- 1 1/4 cups caster sugar
- 1 teaspoon vanilla essence
- 4 medium eggs
- 7/8 cup dark chocolate melted
- 2 cups plain flour
- 2 teaspoons baking powder
- 7/8 cup cream cheese
- 1 tablespoon double cream
- 5 1/4 ounces nougat
- 24 sugar small, eyes
- Preheat oven to 350u0b0F. Line a 12-cup muffin pan with paper liners. Cream butter, sugar, vanilla extract and a pinch of salt. Add eggs, 1 at a time, then fold in chocolate. Sift in flour and baking powder then fold in. Distribute between paper liners and bake for about 25 mins. Remove and let cool on a wire rack.
- Meanwhile, mix cream cheese, cream and nougat then transfer to a piping bag. Remove cupcakes from liners, cut in 1/2 horizontally, fill with cream cheese frosting then sandwich back together. Decorate with sugar eyes and serve.
