Pan Fried Salmon With Prosciutto And Thyme
- 6 yukon gold potatoes peeled and quartered
- 1/2 cup milk
- 4 tablespoons butter
- 4 sprigs fresh thyme
- 4 salmon fillets 4-5 oz each
- 4 slices prosciutto
- 1 tablespoon lemon juice
- salad Green, to serve
- Place potatoes in a saucepan and cover with cold water. Add a pinch of salt and bring to a boil on high heat. Reduce heat to medium and cook for 12-15 mins, until tender. Drain and toss on medium heat for 30 seconds, until dry. Mash until creamy, beating in hot milk and 2 tbsp of the butter. Season to taste, cover and keep warm.
- Place a thyme sprig on top of each piece of fish. Wrap a slice of prosciutto around the middle. Heat a nonstick skillet on medium-high heat. Cook fish for 2 mins each side, until opaque. Transfer to serving plates.
- Add remaining 2 tbsp butter to same skillet and melt on medium heat. When sizzling, stir in lemon juice. Spoon over fish and serve with mashed potato and green salad.
